Back side of a Taqueria? It's been a long time since I've seen that much aqua in one place. Early sixities/late fifties stuff & early seventies Barbi accessories. Woody's right about that top course. Makes my tail twitch just looking at it. Sad thing is, somebody walked away from that job a long time ago thinking, "Man am I good or what...I can do anything." They definitely got anything. You have an opportunity to dust off the old craftsmanship apron and make it sit up straight for the first time in its life. Even if you stay with the aqua. Kinda retro, which can be cool. I think colors like that were part of what they called Art Deco, but I'm not absolutely certain at the moment. I grew up with a movie theater in town that was almost that color stucco but a little more blue, little less green.

If you notice the laps of the lower courses of tile have much less exposure than the top course. The ridge should be lapping over the tile at least 3". They probably installed the ridge more worried about them falling off than correct exposure.
Is there mud under the ridge? You will likely need metal flashing across this detail (on the back side) even if you reuse the trim. Remove the trim in reverse order and see how they're fastened. If they're nailed cut the heads with hd nippers or a sawzall. If they're mudded or heavily sealed you could be screwed on salvaging them.
If you were putting the trim back on with the correct lap, you might have to do some wiring to hold it in place while sealants or mud cured. You might have to get as Rube Goldberg as that existing ridge-end detail.
You could always bend up a coping metal cap out of aluminum.
