I made beef jerky this weekend while the snow was flying. My first personal attempt and I did good. My husband use to make it all the time but I never participated in the making just the eating. He had 1/2 dozen recipes, well liked, so I put them away in a safe place for later use. Well they are still very safe because I can't find them. Why I moved them, I don't know. Anyway I pulled one off the net by Alton Brown, just a standard jerky nothing fancy but good. I got started on this because I found the dehydrator downstairs, cleaned it up, pulled out a 2lb. london broil and got busy. Since it's hunting season I figured some of you do the same. So the question is...does anyone have a recipe they would care to share? I would like to try a variety, with you guys having already made and given the stamp of approval. PC

You guys should talk to Pot Gregory,he makes deer jerky,AWESOME-Actually my son Brian couldn`t get enough of it-lol
1 qt. soy sauce,(I get it at wal-mart,in the big bottle)1 lb. bag light brown sugar,1/2 bottle of liquid smoke,at least 4-5 oz.hot sauce. I mix it all in a pot,heat on low to melt the sugar,all ingredents combined. I cut my london broil length wise down the middle then cut 1/8-3/16 thick slices. when the sauce is melted,let it cool. then put the meat into zip loc bags.I usually cut up 2-3 average london brouls for this sauce amount. I will let it marinade overnight,or about 12 hrs.then put it on the dehydrator for 7 hrs. I sell ALOT of it to friends.usually 60-80 bucks worth,then get A fat sack for myself. been using this recipe for about 10 years.I experimented with other stuff and it was just not popular with folks they wanted the one from the first jump.
by marinading in the bag you can scavenge the air out.if you marinade it in A bowl it floats and needs to be turned.the bags are the ticket.you can then rinse and dry them and use them for your stock. also when you take it out and about,use small zip locs with just what you'll eat that day,let it set on the dash in the sun,wanna talk about juicy and savory?
